Coconut Chutney

  • Preparation Time: 10 minutes
  • Total Time: 10 minutes (approx.)

Required Ingredients:

  • Fresh Mint leaves – ¼ cup
  • Coriander leaves, chopped – ½ cup
  • Fresh grated coconut – ½ cup
  • Green chillies, chopped – 2
  • Ginger, chopped – ½ inches
  • Water as required
  • Salt as per taste

Steps For Preparation of Mint And Coconut Chutney

  1. Grind the freshly grated coconut into a mixture along with the green chillies, ginger and salt and a little water in a food processor until you get a smooth paste.
  2. Now add mint leaves, coriander leaves and some more water. Grind this mixture until you get a smooth consistency of chutney.
  3. Mint chutney is now ready to be served.

Required Ingredients:

  • Onions, chopped – 2
  • Tomatoes, chopped – 3
  • Chana Dal – 1tbsp
  • Urad Dal – ½ tbsp.
  • Ginger piece – ½ inch
  • Cumin seeds – ½ tbsp.
  • Red chillies – 3 to 5
  • A pinch of turmeric
  • 1 tsp oil
For the Tadka (Temper):
  • Oil – 1tsp
  • A pinch of asafoetida
  • A few curry leaves
  • Mustard seeds – ¼tsp

  • 1 red chilli- halved

How To Prepare Onion And Tomato Chutney?

  1. Dry roast all the dals and cumin in a pan and keep them aside.
  2. Add a teaspoon of oil onto the pan. Fry the red chillies until they are crisp. Keep them along with the dals aside.
  3. Now add the chopped onions in the same pan and fry them lightly. Add in the garlic, fry for a bit and quickly add in the chopped tomatoes, salt and turmeric.
  4. Fry the tomatoes until they are soft and mushy and let it cool down.
  5. Now add the dal, red chillies and cumin in a mixer of food processor and blend it into a fine powder. Next add the garlic, onions and tomatoes. Blend all the ingredients into a smooth chutney.
  6. For the tadka, heat a tablespoon of oil in the pan and quickly add the cumin, mustard seeds, cumin, curry leaves, asafoetida and red chillies. Fry until the curry leaves become crisp.
  7. Now add the tomato onion paste to the pan.

3. Beetroot Chutney Recipe

Now this one’s an absolutely eye-catching, delicious and healthy chutney. Kids are definitely gonna love this one for the beautiful colour of beetroot. You can serve this alongside rice orparathas, rotis and phulkas.

  • Beetroots, medium sized – 2 to 3
  • Green chillies – 2
  • Red chillies – 2
  • Curry leaves – a handful

  • Coconut, grated –¼ cup
  • Red chillies – 2 to 3
  • Tamarind, soaked in water – 1 ½tbspns

  • Oil – 1tbsp

  • Urad Dal – 1tsp
  • Curry leaves – a handful

How To Prepare Peanut Chutney Recipe?

  1. Grind the roasted coconuts, red chillies, soaked tamarind and salt with a little water.
  2. Add more water as needed and grind the mixture into a smooth paste.
  3. In a pan, heat oil, add the mustard seeds and as soon as it splutters, add the curry leaves and urad dal.
  4. Pour over this tampering over the freshly grind chutney.

  • Oil – 3tbsp (1 tbspn for seasoning)
  • Carrots, peeled and grated – 3
  • Sambar onions, halved (or known as pearl onions) – 8 to 10
  • Garlic cloves – 8
  • Green chillies – 2
  • Ginger, chopped – ½ inch
  • Mustard seeds – 1tsp
  • Curry leaves – 7 to 8
  • Urad dal – 1tsp

Steps For Preparation of Carrot Chutney

  1. Heat oil in a pan and add onions, garlic cloves, chopped ginger and green chillies.
  2. Sauté for a while until the onions turn translucent.
  3. Now add the grated carrots, salt and sauté again.
  4. Once the carrots have become soft and tender, turn off the flame and let it cool down.
  5. Grind this mixture into a rough paste, you can add a little water but not too much.
  6. For the tadka, heat a tablespoon of oil and add mustard seeds, curry leaves and urad dal.
  7. Once the colour of the dal turns golden brown, you can pour over the tadka onto the grinded paste.

TIP: You can substitute pearl onions with regular onions if you wish to.

  • Capsicum, chopped – ¼ cup

  2. Now add tomatoes and a pinch of salt and cook until soft and mushy.
  3. Allow this mixture to cool. Once cooled down, add it to a blender along with the coriander leaves and grind into a smooth paste.
  4. Remove this to a bowl.
  5. In the same pan, heat some oil and add the mustard seeds and curry leaves and add this tadka to the chutney.
